spicy Chicken pesto pasta
This is Snoopy’s fave weekday/everyday dish of all times. There was a point where I actually had to boycott making it because he requested it every single day. It’s spicy, garlicky, bright and fresh all together – a perfect easy meal. This is even good served cold on a hot summer day. Enjoy!
1/2 box of Farfalle Pasta (Bowtie) about 6 oz.
1 Tbsp of olive oil
1 lb. of chicken breast or chicken thighs cut into bite sized pieces
*1 Tbsp (heaping) of Sambal Olek- Chili Garlic Sauce
1 Tbsp minced cloves of garlic
1/2 cup of ready-made Pesto (usually ½ a small jar)
1/4 cup of chopped fresh cilantro
1/4 cup of shredded or grated parmesan cheese (or more to taste/top)
10 cherry or grape tomatoes sliced length wise (optional)
Bring a large pot of water to a boil and prepare the pasta according to the box until al dente, usually 8-10 minutes. Drain and set aside.
Heat olive oil in a large heavy bottom pan or skillet at a medium-high heat. Mix in chicken, garlic and chili sauce, cook until juices start running clear and the chicken is about 90% done. *If you really can't handle spiciness, then omit the chili sauce and hit the chicken with some bright lemon and liberal salt and pepper.
Turn the heat down just a touch and toss in the prepared pasta, pesto, and parmesan cheese. You may toss in the tomato at this time too if you wish (I personally prefer it and it just makes the dish so much prettier). Continue to toss and heat for a couple minutes until the cheese melts and the flavors blend. Right before serving, fold in the bright cilantro and dish out :) You may top off with a bit more shredded Parmesan Cheese because come on ... let's be honest here - who would ever say "that's too much cheese"?
