cloudy with a chance of meatballs
serving size 6-8 people
1.5 lbs of ground beef (Choice or higher and 85%/15%)
1 lbs of Italian sausage
1/2 block of medium firm tofu water drained crumbled
1 large yellow or brown onion diced finely
2 Tbsp of garlic minced finely
1 bunch of Italian parsley chopped finely
1 bunch of basil chopped finely
1 cup of Parmesan cheese shredded/ grated
3/4 cup of Romano cheese grated
1/2 cup of Italian bread crumbs
1 Tbsp of kosher salt
1 Tbsp of ground black pepper
2 bottles of your favorite marinara/pasta sauce ( mine is hands down Rao's - soooo worth the higher price point)
Try to drain out as much water as possible from the tofu. What I usually do is put the tofu block on a plate then take a cookie sheet and place it on top then a heavy book or pan. Let it stand for 30 minutes and there should be a lot of excess water on the plate. Drain and crumble the tofu. Combine the ground beef, sausage, tofu, parsley, basil, cheeses, eggs, bread crumbs, salt and pepper.
In a pan add a couple of tablespoons of olive oil and saute the onion and garlic until onion is translucent. I usually dish it out and toss it in the fridge until it cools down enough for me to squeeze out excess liquids. Add it to the meat mixture and mix well. I use my hands and really knead the mixture and combine it well. Start dividing them out into desired meatball size and place them on a parchment lined cookie sheet. I like my meatballs to be a whole handful. Just know that the larger the meatball the longer it will take for the sauce flavor to permeate the meatball.
In a large heavy bottom pan on medium high heat - generously add olive oil. Very carefully add in meatballs in batches and try to brown all sides as evenly as possible and set aside. Once all the meatballs are done drain out excess oil from the pan and place the meatballs back in. Add in your favorite pasta sauce and it should cover the meatballs. Bring to a low boil then turn the heat down and let it simmer slowly for at least 45 minutes to an hour. Top your favorite pasta and garnish with some Italian parsley and some freshly grated Parmesan cheese.
