cola chicken drumsticks

I almost never have soda in the house but from time to time when there's a party I'm always left with bottles of flat coke that usually ends up down the drain. I always feel so guilty wasting it so this is the perfect solution! Another simple recipe and the cola reduces down to this wonderful syrupy glaze that pairs so nicely with the saltiness from the soy sauce.
In a medium sized pot heat a little bit of oil and stir fry the aromatics ( green onion, ginger, garlic and chili pepper) on medium high heat until fragrant. Sprinkle a few small pinches of kosher salt onto the drumstick and add it into the pot ( at this time you can brown the chicken skin but if it's the day after a party - I really can't be bothered to haha) Add in the soy sauce and the Coca Cola then bring it to a soft boil and turn the heat down to a simmer.
Flip the chicken in the pot every 20 minutes so that the chicken can be cooked more evenly in the sauce. It will take a little while for the liquid to reduce down but there's really little or no prep and very little attention needed to watch it. Let all the liquids reduce down 90% until you are left with a thicker sauce consistency. You may add fresh ground black pepper too if you want even more of a kick. Serve with rice or just eat it by itself =)
