easy shallot noodles
So some of the best street foods in Asia are definitely the most simple ones. There's this very aromatic noodle soup called 陽春麵 Yang Chun Mian and it's really not much more than fresh noodles with spring onions and shallots. Even then there is something so incredibly satisfying about this noodle soup dish and so this is my take on this traditionally peasant dish.
Cook the fresh noodles - for good fresh noodles it really shouldn't take any more than 2-3 minutes. Divide into bowls and divide up the fried shallots among the bowls . Combine the soy sauce, sugar, salt, vinegar and water/broth together and bring to a boil. Spoon over the noodles and top with the slivered green onions and cilantro. You may want to add a dash of sesame oil on top if you'd like.
