galbijjim - korean braised beef short ribs
This is the ultimate Korean comfort food and one of my Snoopy's favorites. The actual ingredients are quite simple the only reason not to make this dish more often is because it can be time consuming however if you have a pressure cooker (thumbs up) it will save you major time! This is a braised (melt in your mouth) beef short rib in a savory sweet soy based sauce traditionally with carrots and daikons - you may also I add gingko nuts, dried Chinese dates and water chestnuts - I personally like to add potato to the dish but you don't have to.
Place the rinsed and cleaned ribs back into the pot along with the carrot and radish shavings. Also add in 1/2 of an onion roughly chopped and just generous pinch of salt. Cover short ribs with water and bring it all up to a boil then simmer for 30-40 minutes. Drain the content through a seive but reserve the liquid to use later. Dispose of the veggies.
In a food processor combine all the ingredients in Seasoning A and pulse until it is all finely minced.
Place the rib once again back into the pot along with the minced Seasoning A, all of Seasoning B and 3 cups of the reserved liquid stock. Bring the whole thing to a boil then simmer for another 40 minutes and then add in the carrots, daikon and potatoes - continue to simmer for another 20 minutes until the veggies are cooked through. Add in the corn syrup and sesame oil then just let it cook for 5-10 minutes and you are ready to serve. Garnish with fresh green onions and white sesame seed ... and serve with a large bowl of rice with a side of kimchi =)
