Cook the rice. Once it is done, sprinkle the sushi vinegar and gently use the rice spatula to evenly distribute. Set aside and let the rice cool a bit before you handle it.
Combine all the ingredients from the sauce marinade in a microwave safe bowl. Microwave for 20-30 seconds until sugar is melted. Coat each slice of the spam with the marinade and let it sit for 15 minutes. Preheat a nonstick fry pan on medium heat and sear each side of the spam until you see the sauce has caramelized. I found these Nigiri (type of sushi) mold from Daiso (local Japanese dollar store) and I form the rice cakes with that. If you don't have anything like that you can just use your hands ( wet your hands so the rice won't stick everywhere ) and form the rice cake - making sure to pack it tight. Cut the slices of spam into quarters and coat the slices with the marinade again and place on top of the rice cakes. Here's a variation tip : Sometimes I dip one side with the marinade and I dip the other side with Tabasco (Yum!). Sprinkle some Furikake on a plate and dip the underside of the rice cake with the Furikake. Wrap the seaweed around these little rice treats and seal the ends with some water or a bit of the sauce. You can also do two rice cakes and sandwich the spam in the middle.
