Roasting garlic is one of those things that is super simple things that makes a helluva lot of difference. Roasted garlic is milder and has less of a bite and with this one extra step it just elevates a dish to a whole different level. I love it in certain soups, mashed potatoes and definitely my hummus. To roast garlic simply slice off the top of the garlic and lightly coat the open cloves with olive oil. Then wrap it all up in a cute little package with aluminum foil. Preheat oven to 350 degrees and pop it in there for around 40 minutes or until the whole head of garlic softens up and your kitchen smells divine. You should be able to squeeze gently at the base and all the cloves will pop out.
I know it doesn't look like much but I wish you could smell it right now - zomg mouth-watering...
