shrimp curried quinoa
3 minute prep time - dinner in less than 30 minutes and healthy to boot! This week I have to cook 2 turkeys for the holiday post for the site and honestly I need some rest too! So I needed a quick and easy dinner that isn't lathered with all the holiday good stuff aka Sugar/Butter/Fat, plus I had bought huge bag of quinoa from Costco (yay Superfood!) If you don't have quinoa on hand - not to worry - you can substitute it with regular rice.

Add quinoa, curry powder, garam masala powder, veggie (tomatoes and chopped onion) and mix with a spatula. Pour in the chicken broth and then using the same can fill it half way with water and add it in. Lastly add in the butter and shrimp, I just used frozen shrimps because that is what I had on hand ... I literally didn't even defrost it. Press cook on the rice cooker.
When the rice cooker is done let stand for a few minutes then season with cayenne and salt if needed. Fin .... hehe
