tilapia with herb garlic sauce
Simple weekday dinner - 3 words that you any working person would be happy to hear. I labeled it under the healthy eats but there is a tiny bit of butter in it so don't freak out! I literally can finish making this meal in under 15 minutes - just serve with a side of salad and you have a very healthy meal.
*You can definitely use an egg wash then dust the fish in flour but that will add more carb to your dish so it is up to you =)
Season the 4 filet of tilapia liberally with garlic salt and pepper - keep in mind that this will be the only salt that you will have in the entire dish. Heat a small amount (about 1 Tbsp) of olive oil in a cast iron skillet on medium high heat. Once heated slowly lay down the tilapia filet. Sear each side about 2 minutes each side until it has a nice golden brown crust.
In a sauce pan - heat a small amount of olive oil just to coat the pan, then add in the cold butter. Let the butter melt down and when you see it starting to foam toss in the minced garlic and turn the heat down to medium - low. Continue stirring for about 30 seconds then add in the white wine and squeeze approximately 1 tsp of lemon. Let the sauce reduce down by half and add in the fresh parsley and dill weed.
Let the flavors marry for another minute or so and spoon the sauce atop the tilapia.
