Three cup chicken 三杯雞
So this dish is traditionally Chinese but is also considered a Taiwanese dish due to it's high popularity. The three cups refer to the three sauces: sesame oil, soy sauce and rice wine. I love this dish because you can substitute the chicken with fish, tofu , mushroom or veggies making it very versatile.
Heat the sesame oil in a wok on medium high and add in ginger, garlic and sliced red chili pepper. Saute until fragrant then add in the chicken legs. Continuously flip the chicken until it gets this nice light golden brown on all sides then add in the sugar. Once the sugar melts and caramelizes onto the chicken then add in the soy sauce and rice wine. Turn the heat down to a simmer and flip the chicken occasionally until 90% of the liquid has reduced and the chicken is well coated. Toss in the fresh basil and dish out.
