In the summer heat sometimes I just don't want to eat anything hot. This is the perfect dish to cool anyone off - super simple, nice and light. Cold soba noodles with a umami filled dipping sauce with a slight kick from the wasabi - so good! You can pair it with chicken katsu, seaweed tofu salad or agedashi tofu for a complete meal.
* Mentsuya is quite easy to find but in case you can't find it mix 1/4 cup of soy sauce 1/4 cup of mirin 1/4 cup of water and 1/4 tsp of dashi powder/granules in a microwavable bowl and heat for 40 seconds.
Cook the soba noodles according to package until just al dente. Drain and rinse with cold water and ice until the noodles are cool to the touch - add in the sesame oil and mix well. Place in fridge to chill until ready to serve.
Meanwhile in a small pot - boil some water and blanch the wild vegetables. Drain and set aside.
In a small dipping bowl place 2-3 Tbsp of Men-tsuya and wasabi to taste. Top the chilled soba noodles with green onions, shredded nori and roasted white sesame seed. Serve with a side of mountain veggie and it is just the perfect light lunch or dinner during the heat of the summer.
